Every bottle of our vinegar is a living breathing ingredient. This means they are not pasteurized and therefore contain the living microbes known as the "mother of vinegar". Leaving a vinegar raw like this gives it a more vibrant flavor since the heat of pasteurization will damage a lot of the flavor profile of a vinegar. It also preserves some of the best health effects of the vinegar since it still contains the beneficial microbes that are great for your gut!
